A butcher shop and bakery plans to carve a niche for itself in Kirkwood.

Evergreen Butcher + Baker will open in an abandoned building near Arden’s Garden. It will be owned by Emma Schacke and her husband Sean. The address will be 2011 Hosea L. Williams Drive. Emma, who will be the baker, said the business is about six months away from opening.

“We’re really excited about it,” she said.

The building where the shop will be located has been abandoned for decades but was used as a night club in the 70s and 80s and was used as a hair salon at some point.

Emma has been a baker for the last 10 years and trained at The French Pastry School. Sean has four years experience as a butcher who previously worked as sous chef at the One Eared Stag and several other local restaurants.

According to additional materials provided by the company, the food will be locally sourced. The business will also offer pastry making classes as well as classes on making sausage, smoked meat and “steak appreciation classes.”
